Phosphatidylserine liquid is composed of a hydrophilic glycerol skeleton as the head and two oleophilic groups of a longer hydrocarbon chain as the tail. The glycerol skeleton is composed of serine residues and phosphoric acid residues, which are combined with the light group of C-3 glycerol, and the other two light groups of glycerol, which are respectively combined with the fatty acid tail. Fatty acids at glycerol C-2 have longer carbon chains and more unsaturated bonds than those at glycerol C-1.
When phosphatidylserine liquid has a PH of 7, it has a positive charge and two negative charges. If phosphatidylserine liquid is hydrolyzed by a weak base, the metal salts of fatty acids can be formed. The remaining parts cannot be hydrolyzed. If phosphatidylserine liquid is hydrolyzed by a strong base, glycerol phosphate, serine, and fatty acids can be formed.
