Hydroxytyrosol raw material,the specific influence of PH value on degradation

Hydroxytyrosol is a natural antioxidant with various biological activities. The pH value has a significant impact on the degradation of hydroxytyrosol, which is specifically as follows:

Acidic conditions: Hydroxytyrosol is relatively stable in an acidic environment. A lower pH value can inhibit the activity of some enzymes that may trigger its degradation, and at the same time, reduce its contact with oxygen, thereby decreasing the possibility of oxidative degradation. For example, within the pH range of 3 - 5, the degradation rate of hydroxytyrosol is relatively slow, and functional groups such as phenolic hydroxyl groups in its structure can remain relatively stable, making it less likely to undergo chemical reactions leading to degradation.

Neutral conditions: The stability of hydroxytyrosol decreases in a near-neutral pH environment. At this time, the concentrations of hydrogen ions and hydroxide ions in the solution are relatively balanced, and some hydrolysis reactions or oxidation reactions are more likely to occur. Over time, hydroxytyrosol may gradually degrade, and its degradation products may include some small molecular phenolic substances or other oxidation products.

Alkaline conditions: The degradation rate of hydroxytyrosol significantly accelerates in an alkaline environment. Alkaline conditions can promote the deprotonation reaction of phenolic hydroxyl groups in the hydroxytyrosol molecule, forming more reactive phenolate anions. This anionic form is more likely to undergo oxidation reactions with oxygen in the air, generating oxidation products such as quinones, and then further polymerization or other reactions occur, resulting in a rapid decrease in the content of hydroxytyrosol. Meanwhile, alkaline conditions may also promote the hydrolysis reaction of functional groups such as ester bonds in the hydroxytyrosol molecule, accelerating its degradation.

The influence of the pH value on the degradation of hydroxytyrosol is achieved by changing the stability of its molecular structure and affecting the rate of related chemical reactions. In practical applications, in order to maintain the activity and stability of hydroxytyrosol, it is usually necessary to select appropriate pH conditions for preservation and use according to its environment and specific applications.
